Hungry Family Dinner
  • 8-10 fresh zucchini slices
  • 1 lb. ground beef
  • 1 cup chopped onion
  • 1 clove garlic, crushed
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 2 cups cooked rice
  • 1 can (8 oz.) tomato sauce
  • 1 cup small curd cottage cheese
  • 1 egg, beaten
  • 1 cup shredded cheddar cheese
Cook zucchini in boiling water for 2 to 3 minutes. Drain well. Preheat oven to 350 degrees. On stove, saute meat, onions and seasonings until onions are transparent and meat is fairly cooked. Drain. Place meat mixture in a large bowl. Add rice and tomato sauce. Blend together the cottage cheese and egg; then add to the meat and rice mixture. In greased, 2 quart baking dish arrange half the zucchini slices. Spoon meat mixture over zucchini slices. Top with remaining zucchini then sprinkle cheese over the top. Bake for 20 to 25 minutes or until bubbly.
