Hash Brown Quiche
  • 3 cups frozen shredded hash browns, thawed
  • 1/3 cup butter or margarine, melted
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar chese
  • 1/4 cup diced green pepper
  • 2 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped mushrooms instead of green pepper
  • Increase pepper to 1/2 teaspoon
Preheat oven to 425 degrees. Press hash browns between paper towel to remove excess moisture. Press into the bottom and sides of an ungreased 9-in pie plate. Drizzle with the butter. Bake for 25 minutes. Remove pan from oven and reduce the oven to 350 degrees. Combine the ham, cheese and green pepper or mushrooms and spread over the crust evenly. In a small bowl, beat eggs, milk, salt and pepper. Pour into pie pan. Bake at 350 degrees for 25 to 30 minutes or until a knife inserted in the center comes out clean. Allow to stand for 10 minutes before cutting.
